PINEAPPLE SALSA

Yield:  10 Servings

 

INGREDIENTS:  

1 Fresh Pineapple, peeled, cored & cubed

½ C. Fresh Cilantro, finely chopped

2 Tbsp. Rice Vinegar

½ Jalapeno Pepper, seeded & minced

1 Pinch of Salt

1 bag of Blue Aztec tortilla chips (for dipping)

 

Place all ingredients in a non-reactive bowl.

 
Toss to combine; let stand for 10 minutes. 

 

Serve w/ chips (Blue Aztec chips are best!)
